Cacao and cocoa start as the same seed and end up as different ingredients. Theobroma Cacao is the term for the plant and Cacao is the term for material processed gently and usually at lower temperatures. Cocoa is the harder-processed form, roasted darker and often alkalised, which mellows flavour and darkens colour. The words get used loosely, but the difference is real and you can taste it.
Same seed, different roads
Both words trace back to the seeds of the cacao pod. The road they take after harvest is what separates them. Keep the processing light and careful and the trade calls it cacao. Push the roast harder, press out more fat, or treat the powder with alkali, and it becomes cocoa, the pantry staple most of us grew up with.
What alkalising does
Alkalising, sometimes called Dutch processing, treats cocoa with an alkaline solution to make it darker, milder, and easier to mix into liquids. It is not a fault, it is a design choice, but it planes off the bright, fruity top notes that careful processing preserves. If you have only ever tasted alkalised cocoa, non alkalised cacao is a genuine surprise.
The difference you can taste
Side by side, cocoa tastes rounder, flatter, and more uniform, which is exactly what it is engineered for. Cacao keeps more of the origin character: more fruit, more brightness, more variation from origin to origin. Neither is a health product and we make no claims in that direction; this is a flavour distinction, and it is not subtle once you try both.
